This table describes very well the historic pink biscuit of Reims. The Fossier house in Reims still perpetuates this great Champagne tradition.

Recipe for this cookie :

the Biscuit Rose dates back years 1690. At that time, of the Champagne bakers anxious to use the heat of their oven after removing the bread, came up with the idea of ​​creating a special paste that, after first firing, was left in the bread oven where it finished drying. Hence the word TWICE-CUIT, that's to say cooked twice.

Originally, the cake was white. We wanted to flavor the dough with vanilla. To do this, we had to crush the pod in a mortar with sugar to extract the aromatic substance in the form of small particles of almost black color. Blended into bright white batter, these vanilla particles were spotting the finished cake. We then had the idea of ​​masking this pigmentation with a little red dye, actually carmine. And this is how the lovely pink biscuit from Reims was born !

Since, its recipe remains unchanged as does its method of manufacture, which retains the double cooking practiced originally.

History of Maison Fossier :

Towards 1690, Champagne bakers created a recipe intended to take advantage of the heat of the bread oven after baking, to bake and re-bake a sweet delicacy ; the "bis-cuit" of Reims was born.

During the year 1756, under the reign of Louis XV, an era glorifying the art of living and good taste, was born in Reims a small artisanal biscuit factory. In 1775, his biscuits are present during the coronation of Louis XVI in Reims, and the biscuit factory becomes supplier to the king.

In 1825, she receives a royal diploma with the seal of Charles X recognizing the quality of her biscuits. The gourmets of the kingdom quickly get wind of the very high quality of its specialties, and get delivered, by courier, Rose cookies and gingerbread.

In 1845, a certain Monsieur Fossier, baker of his state, took over from this biscuit factory created in 1756 “Mother House of Reims biscuits” and its delights.
